  • 1/2 cup unsalted margarine
  • 1/2 cup packed brown sugar
  • 1/4 cup organic sugar
  • Mixing bowl
  • Beater
  • 1 egg substitute
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 3/4 cup unsweetened applesauce
  • Spoon
  • 1 cup rolled oats
  • 1 cup semisweet chocolate chips
  • Vegetable spray
  • Muffin tins

      Preheat oven to 350 degrees. Combine the margarine and sugars in a mixing bowl. Beat until blended.

      Add the egg substitute and flour to the mixture and blend. Add the baking powder, baking soda and cinnamon. Pour in the applesauce. Cream until all ingredients are combined evenly.

      Stir in the oatmeal into the mixing bowl. Add the chocolate chips and fold them into the batter.

      Spray the muffin tin with vegetable spray. Pour batter into tins. Bake for approximately 20 to 25 minutes.

  • An egg can be used in place of egg substitute; egg substitute lowers the cholesterol in the recipe. You can add pumpkin seeds, flax seeds or almonds to increase the nutritional value of this recipe.
