What an excellent way to use those over ripened bananas! This yummy cake is perfect for the banana lover. Full of flavor and something different. A great addition to potlucks.

Instructions

Things You'll Need:

  • Cake
  • 2 1/4 cups of flour
  • 1 1/4 cups of sugar
  • 2 eggs
  • 1/2 cup of soft vegetable shortening
  • 1 1/2 cup of mashed ripe bananas
  • 1 teaspoon of vanilla extract
  • Frosting
  • 1/2 cup of butter or margarine
  • 1 lb of confectioners sugar
  • 1/2 cup of mashed ripe bananas
  • 1/2 teaspoon of lemon juice
  1. Step 1

    Preheat the oven to 375 degrees and grease and flour two 9 inch cake pans.

  2. Step 2

    Mix the flour and sugar in a large mixing bowl.

  3. Step 3

    Cream in the shortening, 1/2 cup of the mashed bananas and the eggs. Then beat for 2 minutes on medium speed.

  4. Step 4

    Scrap the bowl sides down and has the remaining mashed bananas and the vanilla extract. Then beat for 1 minute.

  5. Step 5

    Pour evenly into the cake pans and bake for about 25 minutes or until done. Cake will spring back when lightly touched.

  6. Step 6

    To make the frosting, cream the butter until it softens and add 1/2 of the sugar, mix well.

  7. Step 7

    Add the mashed bananas and lemon juice and blend well.

  8. Step 8

    Add the remaining sugar and beat until the frosting is light and fluffy, add nuts if preferred.

  9. Step 9

    Frost the cake after it has cooled. Frost the center, top and down the sides. Garnish with nuts or sliced bananas (only if being served immediately because the bananas will darken)
