Things You'll Need:
- 2-3 pieces of eggplant.
- 2 eggs beaten
- 1 tbsp. vegetable oil or olive oil.
- 1 small size onion
- 1 clove of garlic
- tomatoes ( optional)

Step 1
Wash the eggplant thoroughly. Slice it either lengthwise, crosswise or whatever shape you want. I usually slice the eggplant crosswise, thinly. Then, set aside.

Step 2
Slice the onion and clove of garlic. It is better to slice them into smaller pieces. If you use tomatoes, slice them into small square size. then set aside.

Step 3
Beat the eggs and put a little salt in it. It is good to put garlic powder in the beaten eggs (to eliminate the odorous smell of the egg.) Garlic help it smells really tasty.

Step 4
sauté the garlic and onion. Cook in 3 minutes or until brown. Add the sliced eggplant, cook in 2 minutes in medium heat. Then add 2 tbsp of soy sauce. Continue cooking.

Step 5
When the eggplant is half done, pour into it the beaten eggs. Stir and continue cooking. Be sure to stir it thoroughly to mix the eggs and the eggplant. Add a little water and continue cooking in medium heat until done. Serve hot.
