How to Make Healthy Homemade Oatmeal Pancakes

Do you love breakfast - and pancakes - but dislike those unhealthy pre-packaged pancake mixes? Here is an easy, high-fiber pancake recipe that includes eggs, yogurt, oatmeal and cinnamon.

Instructions

Things You'll Need:

  • Frying pan or skillet
  • Blender
  • Non-stick cooking spray
  • Yogurt (1 6 oz. container of the "light" variety - flavored or plain)
  • Oats (1 cup, raw/uncooked)
  • Eggs (4)
  • Flax meal/ground flaxseed (1 tablespoon)
  • Ground cinnamon
  • Fruit or berries (optional)
  • Water (1/2 cup)
  1. Step 1

    Crack four whole eggs into the blender (can also use two whole eggs / two egg whites if desired). Add the container of yogurt. Blend until smooth.

  2. Step 2

    Add one cup of uncooked oats to the blender. Blend on low speed until oats are mixed in, then add one tablespoon of ground flax seed / flax meal.

  3. Step 3

    Add cinnamon as desired. Add blueberries or other fruit if desired. Add half a cup of cold water, as this mixture tends to get very thick especially after it stands for a few minutes.

  4. Step 4

    Preheat frying pan or skillet to medium heat. Spray lightly with non-stick cooking spray. Pour pancake batter directly onto skillet from blender to form pancakes.

  5. Step 5

    Allow pancakes to cook until you seen small bubbles forming on the top of the pancakes, then flip and cook for another 1-2 minutes.

  6. Step 6

    Remove from skillet and allow to cool for a couple minutes. Serve with butter, margarine or fruit jelly/jam.

Tips & Warnings
  • If batter becomes too thick, add a little more water or trying blending the mixture for a few seconds before pouring new pancakes.
