How to Make Garlic soup

Make home made Garlic soup Like they do in Mexico

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 9 heads of garlic
  • 2 cans of chicken broth
  • Heavy cream to taste
  • salt and pepper to taste
  • 1/2 cup olive oil
  • Crushed red pepper
  • Tabasco sauce
  1. Step 1

    Cut the top off the heads of garlic, pour a little oil on them and place in microwave for 1.5 to 2 minutes. Allow garlic to cool, Seperate and Peel Garlic. Add garlic, oil,salt and pepper to a big boiler. Cook til garlic starts to shrivel about 15-20 minutes Do not get oil temperature too high, it will smoke and make the garlic bitter (Low and slow)

  2. Step 2

    Add onions, cook til the onions are translucent about 10 minutes.

  3. Step 3

    Add chicken stock and cook for 30 minutes on low heat. After it has cooked, separate the stock from the solids, place solids in a food processor with about a cup and a half of stock, puree about 20 seconds. Add the remainder of stock. Put the ingredients back into boiler, cook on low or keep warm til ready to serve. Do not boil!

  4. Step 4

    Serve immediately or refrigerate for up to a week.

Tips & Warnings
  • When you are ready to serve,You can add cream, milk, Cilantro, crushed red pepper and hot sauce if you like it spicy You can also serve hot flour or corn tortillas as this is a dish I got while in Mexico. I have worked for 3 years to get it right.
  • Remember not to get in a hurry this soup is good but needs to be cooked on low heat through out the cooking process.
  • Make a big bowl it goes fast.
