How to Grill Great Fish
Grilling great fish can be frustrating. But when done right can be as enjoyable as eating it. Here are a few easy steps to grilling tender, juicy, succulent fish! Does this Spark an idea?
Things You'll Need
- Grill(charcoal or gas)
- Fresh, quality fish
- Aluminum foil
- Seasonings
- 1 fresh lemon
- 1 onion
- 1/2 stick butter
- Metal spatula

When buying fish, freshness is a must. The fish should have a mild odor. Never buy fish that has a strong fishy smell. If you plan on buying an uncut fish make sure the eyes are bright and clear. Red gills are also a sign of freshness.

Next, prepare your fish for cooking. Sprinkle a combination of your favorite seasonings on to both sides of the fillet. I use a mixture of Cajun seasoning, onion powder, garlic salt, and black pepper. Using a fork, stitch the meet to help the seasonings sink into the fish. Now gently tear off a piece of foil about three times the size of the fish. Once the fillet is in he center of the foil, cut the onion and lemon into circular slices, then stagger them on top of your fillet. I like to put the slices of butter between the vegetables. When finished seal the foil around the fish. This ensures you don't lose any precious juices and that they get cooked deep into the meat.

When cooking fish you typically want to use high heat. Between 400 and 500 degrees will cook the fish faster thus preventing the meat from drying out. Turn on the gas and wait until the grill is hot. If using charcoal, the coals should be white with an orange glow around them. Carefully set your foil packet onto the grill and close the lid. Cook for 10-12 minutes until fish is flaky. When the fish is done, remove the entire foil package with your metal spatula. The foil will be hot so be careful. Now open, let cool, and enjoy!
