  • 1/2 cup blueberries
  • 2 teaspoons orange zest
  • 6 tablespoons sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 egg
  • 1/4 cup sour cream
  • 1/4 cup orange juice
  • Muffin pans
  • 3 mixing bowls

Instructions

    • 1

      Preheat the oven to 400 F. Lightly grease one or two muffin pans to reduce your muffins from sticking.

      Mix the blueberries with 3 tablespoons of the sugar and the orange zest until mixed well. Set the mixture aside.

      Pour the flour, baking powder and the rest of the sugar into a bowl. Set it aside.

      Mix the egg, orange juice and sour cream in another bowl until mixed thoroughly. Add it to the flour mixture and mix for about 10 seconds.

      Fold the blueberry mixture into the other mixture.

      Spoon the batter into your muffin baking pan, filling them a little over the half mark.

      Bake the muffins for 15 to 20 minutes until golden brown. Let the muffins cool before taking them out of the muffin pans.
