Things You'll Need:
- Tomatillos (1 bag)
- White Onion (1 small or 1/2 large)
- Garlic (1-2 pieces)
- Serrano Chilies (to taste)
- Cilantro (1 bunch)
- Salt (to taste)
- Blender
- Griddle or large skillet
- Serving dish or container

Step 1
Bag that small tomatillos for salsa verde are sold inGather the required ingredients. Tomatillos can be found in many markets specializing in Latin American foods including Food 4 Less. The smaller tomatillos make the best salsa and are usually sold in a green mesh bag. It is more work to remove the husk and wash, but well worth the effort in the end.

Step 2
Remove the husk from the tomatillos and wash thoroughly. I usually wash with soap to remove the waxy substance on the tomatillos. Rinse really well to remove any soap residue.

Step 3
Wash and stem the chilies. The quantity depends on how spicy you want your salsa. I usually smell or taste them as the spiciness of each chilie varies and I like my salsa to have a kick.
Peel the garlic and onion. Cut the onion into quarters. -

roasting the tomatillos, chilies, onion and garlic. cook until all sides are blackened for the best tasting salsa verdeHeat a griddle pan (comal) on medium high heat, if you dont have one a griddle pan or skillet will work. When warm, add the tomatillos, chilies, onion and garlic and toast until all surfaces are charred. The tomatillos will turn color from green to a yellowish green as they cook and the surfaces become blackened. The onion and garlic will become fragrant and will blacken quickly.

When the items are cooked and blackened add them to a blender (the garlic and onion will cook the fastest).

Add salt and cilantro and blend until desired consistancy (about 1-2 minutes).

Grab a tortilla chip and dig inPour the salsa verde into a serving dish or plastic container and serve.
