Things You'll Need:
- 3 cups boiled shredded chicken
- 1 can enchilada sauce
- 1 medium onion
- 2 cups shredded Mexican cheese blend
- 1 package cream cheese
- fresh cilantro
- 12 flour tortillas

Step 1
First you will need a deep baking dish where you will add 2/3 of a cup of enchilada sauce. You can add the spicy enchilada sauce if you like it a little spicier. Then you will need to place a layer of the tortillas. You will then need to chop you onion and place to the side.

In a small bowl you will need to combine the cream cheese, 1 cup of the shredded cheese, and 1/8 of a cup of cilantro. Once you have this mixture mixed up you will spread a thin layer of this overtop of the tortillas. Then you will top with a layer of the shredded chicken. Then top with another layer of the tortillas and cover with a layer of the enchilada sauce. Repeat process until you use all of the chicken and cheese.

Then top with the onion and remaining shredded cheese. Then bake in a 350 degree oven for 25 minutes or until heated though out. You can top at time of serving with some additional cilantro. Best if eaten while it is hot.
