Making a Moist & Xtra Tasty 7UP Lb. Cake

Instructions

Things You'll Need:

  • 3 C. flour
  • 3 C. sugar
  • 5 eggs
  • 1/2 c. butter flavored Crisco
  • 2 sticks + 2 Tablesp. Butter
  • 7 oz. 7UP
  • pinch of salt
  • 2 T. of Butter Buds
  • 1 t. Vanilla Extract
  • 1 t. Lemon Extract
  • 1 t. Butter Extract
  • 1 t. Almond Extract
  • 1 c. Powdered Sugar
  • 4 teasp. Lemon Juice
  1. Step 1

    Butter & eggs should be at room temperature before using.

  2. Step 2

    Add together flour, butter buds & salt, set aside. Cream together shortening, butter and slowly add sugar til fluffy, set aside. Separate eggs and beat whites til stiff, set aside. Add egg yolks slowly into shortening, butter, & sugar. Slowly add in flour mixture alternating with small amounts of 7UP at a time. Add egg whites in slowly. Lastly add in extracts.

  3. Step 3

    Prepare pan for baking by greasing pan with Butter Flavored Crisco & dusting with flour. Use a nice deep Bundt pan. Bake @ 350 for approximately 1 - 1 1/2 hrs, depends on oven. Start checking for doneness after 1 hr. Invert and cool. Add drizzle.

  4. Step 4

    Lemon Drizzle...Melt 2 Tablesp. butter, add in 3-4 teasp. lemon juice & 1 c. of powdered sugar. Mix well, let cool and drizzle over cooled cake. The drizzle will run into hole, spoon out and add over entire cake.

Tips & Warnings
  • This cake freezes well and also makes great cupcakes. Great to have in the freezer for special unforeseen occassions. This cake is even better after the 2nd day.
  • Make sure that your pan is nice & deep because this recipe makes a nice deep cake. Beating the egg whites separately til stiff plus the amount of 7UP can dictate the cake size. You can also lightly dust this cake with a little powdered sugar for an extra effect on top of the drizzle and of course extra sweetness.
