Things You'll Need:
- cooking spray (such as Pam)
- baking sheet
- 1/4 cup regular egg substitute
- 1/4 cup matzo meal
- 1/2 small onion chopped
- 1 tsp table salt
- 14 tsp ground black pepper
- 3 large potatoes

Step 1
Preheat over to 500 degrees.
Liberally coat baking sheet with non-stick cooking spray (such as Pam) -
Step 2
In a large size bowl combine the 1/4 cup of egg substitute, 1/4 cup of matzo meal, 1/2 small onion chopped and 1 tsp table salt and 1/4 tsp of ground black pepper.

Step 3
Take your food processor and grate the 3 large potatoes through the feed tube one at a time. Make sure to squeeze any excess moisture from the potatoes. Make sure NOT TO GRATE POTATOES AHEAD OF TIME.
Combine grated potatoes with egg mixture. -
Step 4
Take your baking sheet that has been liberally sprayed with your non-fat cooking spray and arrange twelve (12) potato pancakes on your baking sheet and then spray again. Each pancake should be about 1/4 cup of mixture.

Step 5
Bake in pre-heated oven for 15 minutes and then turn the potato pancakes over and let bake for an additional 15 minutes or until crisp. Total baking time should be 30 minutes and should be at desired crispness.
