Simple and Delcious Russian Cheese Pancakes with Strawberry Jam

Russian Cheese Pancakes also known as Sirniki, pronounced SEER-ni-kee are delicious and so easy. The inside stays delicate and soft while the outside has just the right amount of crispiness. Traditionally they are served with Russian smetana which is also equivalent to sour cream or jam and in some cases both. The pancake batter can be made ahead and cooked as needed which makes this a great dish for brunch guests.

Instructions

Things You'll Need:

  • 16 ounces Ricotta Cheese
  • 2 Eggs
  • 4 Tbsp. Butter softened
  • 2 Tbsp. Sour cream
  • Flour until pancake like consistency
  • 4 Tbsp. Sugar
  • Salt
  1. Step 1

    Combine all of the ingredients together in a bowl, adding flour until the batter resembles pancake batter.

  2. Step 2

    Place the Russian Cheese pancake batter in refrigerator for at least one hour or for the night.

  3. Step 3

    Heat oil in a frying pan on the stove to medium heat. Place pancake batter on pan forming small pancakes slightly smaller than the palm of a hand. When brown around the edges flip and cook the other side of the cheese pancakes.

  4. Step 4

    Remove pancakes to a serving dish or directly to plates. Top with sour cream, jam, or eat your delicious Russian Cheese Pancakes plain.

Tips & Warnings
  • You may use plain yogurt instead of sour cream in the batter.
  • If you do not have plain yogurt or sour cream you can even use flavored yogurt in your pancake batter.
