Ever wondered hot to make a fat free, dark cajun roux in the microwave? Here is how you do it....C'est Bon

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Large Glass or Pyrex bowl, Microwave safe
  • Wooden or bamboo spoon( metal will get too hot, and plastic WILL melt)
  • 2-3 cups flour
  • Microwave oven
  1. Step 1

    Add flour to bowl and place in microwave. Cook 20-30 seconds, turn, stir and repeat. NO longer than 30 seconds at a time, it will burn.

  2. Step 2

    Keep cooking for 20-30 seconds at a time, waiting a few minutes between stirrings. Check for roux doneness frequently.
    Keep alternating stirring, and cooking for 30 seconds until you think it is done.The darker the better, but don't burn it!

  3. Step 3

    If you think the roux is dark enough , allow to cool in bowl . Cooling may take a while, as it is extremely hot.
    You want your Roux to be a Medium brown in color, almost the color of hot chocolate mix.

  4. Step 4

    Once cooled add Roux to Gumbo' s gravies, soups and stews. Store leftovers in a clean glass jar in refrigerator.

Tips & Warnings
  • Roux burns very easily, watch it closely
  • The roux will be HOT, no plastic or metal spoons.
  • Handle carefully
