Things You'll Need:
- Large Glass or Pyrex bowl, Microwave safe
- Wooden or bamboo spoon( metal will get too hot, and plastic WILL melt)
- 2-3 cups flour
- Microwave oven

Step 1
Add flour to bowl and place in microwave. Cook 20-30 seconds, turn, stir and repeat. NO longer than 30 seconds at a time, it will burn.

Step 2
Keep cooking for 20-30 seconds at a time, waiting a few minutes between stirrings. Check for roux doneness frequently.
Keep alternating stirring, and cooking for 30 seconds until you think it is done.The darker the better, but don't burn it! -
Step 3
If you think the roux is dark enough , allow to cool in bowl . Cooling may take a while, as it is extremely hot.
You want your Roux to be a Medium brown in color, almost the color of hot chocolate mix. -
Step 4
Once cooled add Roux to Gumbo' s gravies, soups and stews. Store leftovers in a clean glass jar in refrigerator.
