Whenever my friends and I get together one of our favorite meals to make is Honey Mustard Chicken Salad. We use fresh salad greens, vegetables and breaded, frozen chicken breast tenders and coat it with the secret honey mustard sauce. Everything is set up salad bar style and each person can choose their favorite toppings. You will find it is easy to prepare and delicious.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 8 Frozen breaded chicken breast tenders
  • 1/2 cup peanut or vegetable oil
  • 1 cup bottled honey mustard
  • 1/2 stick butter
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 4 cups salad greens (washed and dried)
  • 2-3 freshly diced medium tomatoes
  • 1 can black or green olives
  • 2 cups shredded mild cheddar cheese
  • 2 medium cucumbers, peeled and sliced
  • Bottled or homemade honey mustard or ranch dressing
  • Garlic Croutons
  1. Step 1

After preparing salad greens and various toppings, place them in individual bowls to create a mini salad bar. Be sure to include the salad dressing in your salad bar.

  2. Step 2

Heat peanut or vegetable oil in a large skillet and place frozen, breaded chicken breast tenders into the hot oil. Cook on each side until golden brown and cooked through (the package should show the length of cooking time). Remove chicken from pan and place on paper towels to drain.

  3. Step 3

In a large skillet, combine butter, brown sugar and honey and heat until bubbly and the sugar has melted-stir constantly. Whisk in the honey mustard and let the sauce heat for 1 minute and turn off the heat. Take cooked chicken tenders and place them into the sauce making sure to coat on both sides. Remove from pan and place chicken on a serving platter.

  4. Step 4

Add the chicken to your mini salad bar and the salad will be ready for your guests to enjoy!

Tips & Warnings
  • It is best to cook the chicken just before or as your guests are arriving. To save time and money, each guest can bring one salad item to save time and money.
  • If you are able to find it, whole grain honey mustard works best.
  • Serving bread or rolls with the salad will round out your meal.
  • Feel free to add any other vegetables that you like!
  • Be sure not to use peanut oil if any of your guests have a peanut allergy.
