How to Make Avocado and Green Chile Salsa

This salsa is better than guacamole and has fewer calories.

Instructions

Things You'll Need:

  • 1 Ripe avocado
  • 1 fresh green chile(or 1/2 can diced green chile-Ortegas, Macayos, etc.)
  • 3 Green onions
  • 1/2 Lime
  • 1 med tomato or 8 grape tomatoes
  • Cilantro
  • Salt and pepper
  1. Step 1

    Select a ripe avocado by picking one that has dark skin and is slightly soft to the touch. Ripen green avocados by placing them in a brown paper bag on the kitchen counter for a few days. Hint: to speed up the ripening process put a banana or apple in the bag.

  2. Step 2

    Slice avocado in half from the top to the bottom. Remove the seed with a sharp knife by carefully hitting the seed crosswise with the blade. Twist slightly to pull out the seed. Cut the avocado into 1/4 strips while it is still in the skin. Then cut perpendicular to these cuts to create small squares or diamond shapes. Remove pieces with a spoon, placing into a bowl. Squeeze lime juice over the avocado pieces.

  3. Step 3

    Roast green chile over an open flame on your stove or by placing under a broiler in the oven, flipping over after a couple of minutes, until charred. Slightly cool chile then place in plastic or paper bag for a few minutes. This will allow the skin to be easily slipped off the chile. Coarsely chop chile (about 1/4 inch squares). Or use half a small can of diced green chiles. Add to bowl.

  4. Step 4

    Dice green onions, tomatoes and cilantro (optional). Grape tomatoes have the best flavor for this recipe. Add to avocado/green chile mix. Add to salt and pepper to taste, then enjoy with your favorite tortilla chip!

Tips & Warnings
  • Do not overmix the salsa or the avocado will become mushy.
  • Jalapenos can be added if you like a spicier salsa
  • Also taste great on tacos, tostados, carne asada or in burritos
