Things You'll Need:
- Baking sheet
- baguette bread
- butter
- garlic
- pesto
- sun dried tomatoes
- goat cheese
- parmesan cheese
- Knife
- Cutting board
- Microwaveable container
-
Step 1
Preheat oven to broil. Prepare butter by placing about 1/2 of butter in a glass bowl (or any container that is microwave safe) with about 3 cloves of chopped garlic. Add more or less garlic depending on your own taste. Heat butter mixture in the microwave until butter melts.
-
Step 2
Slice your baguette bread into quarter inch slices. Dip one side of the sliced bread into the melted butter. Lay bread, butter side up on a baking sheet. Fill sheet completely with buttered bread and place under the broiler. Toast until golden brown (this should only take a minute so keep your eye on the oven)
-
Step 3
Using a knife or the back of a spoon, spread a layer of good store bought pesto onto each slice of toasted bread. The pesto should completely cover the top of the bread.
-
Step 4
Remove sun dried tomatoes from jar. Cut into pieces about the size of a pencil top eraser. Leaving the bread on the backing sheet sprinkle the sun dried tomato pieces on top of the pesto. Each slice of bread should have about 4 or 5 pieces of sun dried tomato.
-
Step 5
Crumble the goat cheese on top of the bread slices. Each slice should have about two crumbles of goat cheese. Finally, sprinkle about 1 cup of good quality grated parmesan cheese over the entire cooking sheet.
-
Step 6
About 10 minutes before your guests are due to arrive, preheat your oven to 350. Place the backing sheet full of the appetizers into the oven until the parmesan cheese melts, about 4 minutes. Place warm appetizers on a serving platter along side some cocktail napkins and enjoy.

on 8/2/2009 I have made these for several events and they are always a hit. If you decide to make them yourself, i recommend making more then you expect, they are easy to eat and they go fast.
