How to Cut Beef Into Steaks

Cutting your own steaks is a great way to customize your dinner. By cutting a large piece of beef into steaks on your own, you can split the meat into pieces that are the desired thickness and shape. Additionally, you can trim as much (or as little) fat from the meat as you want.   • Beef
  • Cutting board
  • Sharp, long knife

Instructions

      Place the beef on a long cutting board, with the length of the meat parallel to your body.

      Position the knife about 1 1/2 inches from the end of the piece of beef. With a smooth motion, draw the knife straight down through the meat. (See References for a video demonstrating this cutting technique.) Place the steak on a platter. Repeat until all the beef has been cut into steaks.

      Trim at least half the fat from the edges of the steaks to prevent flareups while cooking. Trim more fat if you desire a leaner cut of meat.

      Wrap the steaks in plastic wrap and refrigerate or freeze them unless you're planning to cook them immediately.
