Welsh rarebit, also known as Welsh rabbit, does not have any rabbit in it at all. Rarebit is actually a sauce that is served either as a main or side dish. The name dates from the 18th century, when Wales was one of the poorer regions of Britain. Cheese was considered the Welshman's meat because meat was too expensive. Regardless, this simple dish is a comfort food that can be dressed up for more elegant occasions. Does this Spark an idea?

Things You'll Need

  • Double boiler
  • Cheddar cheese
  • Heavy cream
  • Beer
  • Mustard
  • Worcestershire sauce
  • Egg yolks
  • Bread
  • Spoon

Instructions

      Grate 2 cups of cheddar cheese or cut it into chunks. Aged cheddar works best.

      Place 1/4 cup heavy cream into a double boiler and heat until boiling. Add 1 tbsp. of beer or ale and return it to a gentle boil.

      Turn the burner off and add 1/2 tsp. of Worcestershire sauce, 1 tsp. sharp mustard and the cheese. Mix thoroughly.

      Stir in two egg yolks until smooth. Place the double boiler over low heat if the cheese has not melted completely and stir until smooth.

      Allow the rarebit to cool overnight or for 3 hours at the very least to develop its flavor. Serve warm over thick toast or spread on the toast and place under a broiler to melt the rarebit until golden and bubbling.

Tips & Warnings

  • Dress up rarebit by placing sliced tomato on top. Poached eggs can be placed on top the toast and the rarebit poured over the top. Water can be substituted for beer.
