Make a beautiful and delicious Cobb Salad for dinner tonight!

Learn to make an easy and delicious Cobb Salad that looks as though it came from an upscale restaurant! This salad is low in sugar and low in carbs too. Hearty enough to be served as a main dish.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups lettuce
  • 1/4 cup cheese - shredded
  • 2 slices bacon - crumbled
  • 1/2 chicken breast -cooked and diced
  • 1/2 tomato - diced
  • 1/4 avocado - diced
  • 1 egg - hard boiled and sliced
  • 2 Tbsp Light dressing
  1. Step 1

    Artfully arrange lettuce on a plate or large flat bowl.

  2. Step 2

    Sprinkle a strip of cheddar cheese on top of the lettuce down one side.

  3. Step 3

    Sprinkle a strip of crumbled bacon on top of the lettuce beside the shredded cheese.

  4. Step 4

    Sprinkle a strip of cooked and diced chicken beside the crumbled bacon.

  5. Step 5

    Sprinkle a strip of diced tomatoes beside the diced chicken.

  6. Step 6

    Sprinkle a strip of diced avocado beside the diced tomatoes.

  7. Step 7

    Lay out a row of sliced egg beside the diced avocado.

  8. Step 8

    Serve with your choice of dressing. I like Ken's Steakhouse creamy parmesan which is low in sugar and carbs but a blue cheese dressing like Marie's would be excellent as well.

  9. Step 9

    Don't spoil it by serving with bread. This salad will fill you up without filling you out if you forego the bread!

Tips & Warnings
  • I bake up several chicken breasts at a time and keep them in ziploc bags ready to be sliced up and used in this recipe and others too. I use the microwaveable kind of bacon that comes in a box. It makes it easy to cook a few pieces at a time and it doesn't require a pan or any clean-up.
