How to Make Poppy Seed Chicken Salad

I love chicken salad and I love Waldorf salad so I ended up combining the two, adding poppy seeds and came up with this poppy seed chicken salad recipe. You can adjust the amount of mayonnaise that you use to suit your taste. Use low fat mayonnaise if you would like to cut calories and fat. The chicken combined with the poppy seeds and apple gives it a delicious flavor. This is great to serve on hot days when you want a quick meal. Just cook the chicken the night before or if you like, substitute canned chicken.

Instructions

Things You'll Need:

  • 3 large chicken breasts, cooked
  • 3/4 cup mayonnaise
  • 1 stalk celery
  • 1 Granny Smith apple
  • 1 tablespoon poppy seeds
  • Salt & pepper (optional)
  • Lettuce leaves
  • Soft sandwich rolls
  1. Step 1

    Chop the cooked chicken breast and celery, clean, core and chop the apple. I find it easiest to cut it in slices then cut each slice into chunks.

  2. Step 2

    Combine chicken, chopped apple, mayonnaise, celery and poppy seeds. Add salt and pepper to taste.

  3. Step 3

    Serve poppy seed chicken salad well chilled on lettuce leaves or on soft rolls.

Tips & Warnings
  • Cook the chicken ahead of time for added convenience. I usually have chicken for dinner the night before and cook a few extra chicken breasts.
  • Tart Granny Smith apples are great for this recipe. You can leave the skin on or peel.
