How to Make Mom's Placek (with Extra Crumbs)

Placek is a staple in the Polish diet, namely around Easter time. Sometimes, Placek can be dry. Are you looking for a moist placek with decadent crumbles. Check out this recipe for the best placek in America.

Instructions

Things You'll Need:

  • 2 oz. (yeast)
  • 7 egg yolks
  • 1 1/2 cups sugar
  • 1/2 lb. butter
  • 1 tsp. salt
  • 1/2 cut raisins (white or dark)
  • 1 1/2 cups milk
  • 7 cups flour
  • 1 tsp. vanilla
  1. Step 1

    Pre-heat oven at 325 degrees.

  2. Step 2

    Mix egg yolks, sugar, and melted butter until sugar is dissolved. Warm the milk. Separately put in yeast, 1 tbsp. sugar, 1 tbsp. milk (this will not be enough to melt the yeast. You will need to add more (about 1/4 cup). Melt yeast. Add the rest of the milk to the yeast, beat with a fork, slowly added 1/2 cup flour. Leave in a warm place until the yeast rises.

  3. Step 3

    When the yeast has risen, add all of the ingredients together, mixing them with a wooden spoon to get out all of the air bubbles. Cover and allow the dough to rise until it becomes double its original size.

  4. Step 4

    Smooth dough in a buttered and floured 2" deep, 14" X 8" pan. Cover and allow to rise again and fill the pan. Beat egg whites. Brush over the top of the dough. Sprinkle crumb topping on top of the placek. Bake one hour. Test after 40 minutes with a toothpick. The dough must be brown on top.

  5. Step 5

    Finally, you are ready to make the crumb topping. Mix 2/3 cup sugar with 1 1/2 cups flour; cut in 12 tbsp. butter (1 1/2 sticks butter) until it is crumbly. Add chopped walnuts if desired. Sprinkle over placek. Bake.

  6. Step 6

    If you desire more crumb toppings, simply repeat step five until the desired amount is achieved.
