Things You'll Need:
- 2 cups mashed potatoes
- 1 egg
- 3/4 cup shredded cheddar cheese
- 1/2 cup chopped onion
- 1/4 cup bacon bits (bacon you fried)
- 1/2 cup bread crumbs

Step 1
This is a delicious twist to those left over mashed potatoes. You will need a large bowl to start. You will add you mashed potatoes to the bowl and allow them to reach room temperature. You will then need to lightly beat one egg and add this into the mashed potatoes.

Next you will need to add the shredded cheddar cheese, the chopped onion, and the bacon that you have fried until it was crispy and drained the excess grease off of by placing on a paper towel. Add these to the mashed potatoes and mix together. Now you will shape this mixture into one inch balls and roll in bread crumbs. It is up to you whether or not you use plain bread crumbs or the seasoned.

Then in your deep fryer you will heat the oil to 375 degrees and fry the balls a couple at a time for 3 minutes or until golden brown. Then remove from the oil and drain on paper towels to remove excess grease. Then serve they are great with ranch dressing or just by there selves.
