How to Make Quick Black Bean Soup

Black beans are a wonderful source of protein, dietary fiber, and an energy boost. This recipe for black bean soup is quick and easy and bound to be one of your favorite bean dishes for pot lucks, barbecues, and your own dining room table, great to eat alfresco, or indoors. Being that black beans are available throughout the year makes them an easy access, a great side or main entree.

Instructions
  1. Step 1

    Press and mince garlic, let the garlic sit for about 5 minutes. This process of waiting converts it from the sulfur containing compound alliin, into a cancer fighting property called allicin.

  2. Step 2

    Drain liquid from the canned black beans, and run them under cold water in a strainer. Do the same if you are using dried beans that you have cooked. This lessens the intestinal gas.

  3. Step 3

    Place the beans in a pot with chicken broth, or the alternative vegetable broth. Set the pot of beans on the burner.

  4. Step 4

    Add your garlic, sea salt to taste, some cayenne pepper, chili powder and 2 tablespoons of extra virgin olive oil. Let sit in pot for about 5 minutes on low. Or if you want a cold bean soup which is pleasing on warm days skip the heating.

  5. Step 5

    On top add salsa and a dollop of plain yogurt, and chives if you so desire.
    Then enjoy your quick black bean soup recipe.

  6. Step 6

    If you want to make a complete protein add some brown rice as the side. This recipe is a great low fat power punch of a meal combination.
