How to Make a Healthier Ice Cream Cake

Learn how to make a simple, low-calorie ice cream cake!

Instructions

Things You'll Need:

  • cake mix
  • diet soda
  • icing
  • ice cream
  • two 8" round baking tins
  • mixing bowl
  • spoon
  1. Step 1

    Pick cake and ice cream flavors that go well together (chocolate cake with mint chocolate chip ice cream, white cake with coffee ice cream, etc). Once the cake flavor is picked, determine a diet soda that would go well with it (diet lemon-lime soda for a white cake, diet cherry cola for a dark cake, or a similar combination).

  2. Step 2

    Empty cake mix into mixing bowl with 12 ounces of the diet soda and mix well.

  3. Step 3

    Pour cake batter (JUST mix and soda - do not add any other ingredients) into two round baking tins and bake as long as needed (depending on the oven, 30-40 minutes at 350).

  4. Step 4

    Once the cake is baked, let cool and then freeze for no less than one hour.

  5. Step 5

    Melt ice cream for 30 seconds in microwave. Use half a carton for a fairly thick cake or more or less depending on preference.

  6. Step 6

    Remove cake from freezer. Place one on a plate. Spread the ice cream on top of the cake and then, when smooth, place the other cake on top.

  7. Step 7

    Return the entire cake to the freezer and let the layers freeze together for no less than two hours.

  8. Step 8

    Remove the cake and ice the entire cake (both layers and ice cream). Enjoy!
