How to Clean a Hobart Meat Slicer

Hobart meat slicers should be wiped down thoroughly with a damp cloth after each use. In addition, the meat slicer should be cleaned once a week with a tasteless, odorless, food-grade machine oil. These oils can be purchased from restaurant-supply companies that sell meat slicers. This oil will not only clean the slicer, but will provide a protective barrier to make cleaning easier during future use.

Instructions

Things You'll Need:

  • Rag
  • Food-grade machine oil
  1. Step 1

    Saturate a rag with oil and rub it over the entire meat slicer.

  2. Step 2

    Turn the meat slicer on and ensure that all blade guards are in place.

  3. Step 3

    Hold the oiled cloth against the front surface of the blade to distribute the oil, taking care to keep fingers and any loose threads of the cloth away from the blade. Repeat the process with the back surface of the blade.

  4. Step 4

    Turn the meat slicer off and remove the plate located directly in front of the blade. Wipe the area between this plate and the blade as food may accumulate here.

on 10/31/2009 We have discovered this situation a number of times and detemined that some people have sprayed Pam or other cooking spray on the underside of the slide mechanism. Edgemaster Mobile Sharpening trains our people in correcting this problem. Often the sliding shaft has to be removed to get the unit to work well again. DON'T USE ANYTHING OTHER THAN MINERAL SPIRITS
on the mechanism as they will solidify and make the operation difficult.

on 9/20/2009 The arm will not slide and the dial will not turn. I am sure this is from buildup, but it is still a problem. I have tried to clean the slicer to no avail.
