How to Roast Pine Nuts
Pine nuts are the edible seeds of certain pine trees. They are cholesterol-free and contain a variety of vitamins and minerals. They function as a healthy addition to many different foods, and you can also eat them by themselves. Pine nuts come in different varieties. For roasting, the most important consideration is their shell type. Soft shelled varieties will cook quicker and at lower temperatures. Hard shelled varieties will need higher temperatures and will take longer. Roasting them is simple and easy, but requires careful attention to avoid burning. Does this Spark an idea?

Rinse the pine nuts in a colander.

Preheat your oven to 325 F if you are roasting soft shell pine nuts or to 375 F if you are using hard shell pine nuts. Place the pine nuts in one of the baking trays. Spread them out until they form a layer across the tray that is one pine nut thick. If they are still wet from rinsing, this is fine. More moisture will increase the time it takes to cook.

Put the pine nuts in the oven. Allow soft shelled varieties to cook for 45 to 65 minutes, depending on their size and level of moisture. Allow hard shelled varieties to cook for 10 to 15 minutes.

Mix the nuts after 10 minutes. Mix soft shelled varieties every 10 minutes after this. Remove hard shelled varieties after five more minutes.

Taste test soft shelled nuts after 30 minutes. Soft shelled nuts will become translucent as oil begins to evaporate out of them. They will then turn white and slowly brown. Remove soft shelled nuts when they become a whitish golden color.

Remove the pine nuts from the oven the moment they turn light brown. Transfer them to the second baking tray and allow them to cool off. This stops the heat transfer immediately and stops the cooking process before they overcook.

Tips & Warnings
Add salt to the pine nuts before roasting for added flavor.
Pine nuts burn very quickly because of their high oil content. Make sure to watch and taste test them constantly towards the end of their cooking time.
