Things You'll Need:
- 8 jalapeno peppers
- 1 package cream cheese
- 1/2 cup shredded cheddar cheese
- 1 teaspoon Cajun seasoning
- 8 slices peppered bacon

Step 1
You will first need a pair of rubber gloves. I have found that this cuts down on the lasting effects of cutting the jalapeno. You will need to cut the jalapeno lengthwise. You will need to remove all seeds and the white lines running through the pepper. Then rinse them out to remove any left over seeds. Then dry with a paper towel.

Step 2
In a small bowl you will need to combine 3 ounces of cream cheese, 1/2 cup shredded cheddar cheese, and cajun seasoning. Then you will place 2 teaspoons in each side of the peppers. Then place to the side while you will cook the bacon. You will need to cook the bacon until it is translucent. Then remove the bacon from the heat.

You will then cut the bacon slices in half and wrap a piece around each of the peppers securing them in place with a toothpick. You will then bake in a 350 degree oven for 30 minutes or until the bacon is crisp. Remove from oven a discard the toothpicks and serve while hot.
