How to Cook Cranberry Sauce with Honey and Jello

Use Honey instead of white processed sugar to naturally sweeten your cranberry sauce. Locally grown honey may prevent pollen allergies. Cranberries are low fat and are believed to aid in kidney function. Add other fruit such as blueberries (known as an antioxident) for for variation and pizzazz. Using Jello will add flavor and insure the cranberry sauce will solidify.

Instructions

Things You'll Need:

  • 1 pkg fresh or frozen cranberries (3 cups)
  • 1 cup honey
  • 1 cup water
  • 1 pkg (raspberry) Jello, made with 1 cup of water
  • 1 cup fresh fruit. ex. strawberries, raspberries, blueberries or rhubarb
  1. Step 1

    Boil water and honey for 5 min.
    Add cranberries
    Cook on medium high uncovered for 10 min. Skins will be mostly "popped"
    Use a mesh cover if cranberries are splattering, lower heat. You are boiling down the water to create a gel.

  2. Step 2

    In small bowl. Stir 1 cup boiling water into Jello, use sugar free to diet. Let it rest while waiting for the cranberries to pop.
    Add Jello to cranberries
    Add fruit to cranberries
    Cook 5 min. stirring well
    Sauce should be thick, not watery

  3. Step 3

    Carefully pour into serving bowl. Wipe edges or splashes. Chill uncovered in fridge for 1 hour before serving. Cranberries keep in the fridge for days covered.

Tips & Warnings
  • This is a super tasty treat over ice cream. We love SoyDream and RiceDream.
  • Cranberry sauce can burn. Use care when pouring. If a splash lands on your skin, immediately run ice cold water on it.
