Things You'll Need:
- 4 pork chops, boneless or bone-in
- Olive oil
- 1/2 cup flour
- 1/2 tsp salt
- 1/2 tsp cayenne pepper, divided
- 2-3 garlic cloves, diced
- 6 finely chopped green onions
- 1 cup sliced fresh mushrooms
- 1 pkg brown gravy mix
- 1 cup milk
- 1 15oz can petite diced tomatoes, undrained
- 1 cup water
- 1 tsp dried thyme

Step 1
Combine flour, salt and 1/4 tsp cayenne pepper.
Coat pork chops in flour mixture.
In a large frying pan, heat olive oil and brown
pork chops on both sides.
Remove pork chops from pan and set aside. -
Step 2
Add more oil to frying pan if needed.
Add chopped green onions, garlic and mushrooms.
Sauté until tender. -
Step 3
In a small bowl, combine gravy mix and 1/2 cup milk.
Stir until well blended and add to the frying pan.
Mix well.
Add the petite cut tomatoes with juice, 1/2 cup milk, 1/4 tsp
cayenne pepper, and one tsp thyme. Stir until well blended. -
Step 4
Return pork chops to the frying pan. Cover with
the sauce.
Reduce heat, cover pan and simmer for 15 minutes.
The gravy is delicious with just a hint of heat.
Add more cayenne if you prefer a hotter sauce.
Serve over rice or mashed potatoes.
