Are you tired of the same old sausage and eggs for breakfast? Well this should spice things up a little! Cranberry pancakes are one of the things that my kids just love!

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 cup fresh cranberries (you can use 1 cup whole cranberry sauce)
  • 3 tablespoons sugar
  • 1 cup flour
  • One half cup yellow cornmeal
  • 1 teaspoon baking powder
  • One Forth teaspoon of salt
  • 1 and one half cup of milk
  • 1 large egg
  • 3 tablespoons of melted butter
  • 2 tablespoons pancake syrup
  1. Step 1

    Combine the cranberries and sugar in a food processor to chop. You can also use a blender if you dont have a food processor. Remove and put into a bowl on the side.

  2. Step 2

    Put the flour, cornmeal, baking powder, and salt into the food processor or blender and mix them together well. Then add the milk, egg, butter and syrup. Only blend it a little bit. A few pulses of the blender should be just fine.

  3. Step 3

    Add the cranberry mixture back into the blender/processor and mix slightly. Heat a griddle or pan and add a little bit of butter or oil. Cook the pancakes about 1 minute on each side. Then enjoy!! The recipe will make about 8 pancakes. I hope you like them as much as my kids and I do!
