Peach fritters are delicious and easy to make for a quick breakfast treat or an elaborate brunch. This recipe for peach fritters is quick and easy, you can make them while cooking other breakfast food, and these fritters will get done on the side easily. The recipe makes enough peach fritters for 4 to 6 people.

Instructions

Things You'll Need:

  • 2 eggs
  • 1/2 cup milk
  • 1-1/2 tbsp melted butter or oil
  • 1-1/4 cup flour
  • 1 tsp salt
  • 1-1/2 tsp baking powder
  • 1-1/2 cup sliced peaches
  • Oil for frying
  1. Step 1

    Wash and slice the peaches. If you are using canned peaches, drain the water and pat dry the peach slices so that the fritters are not soggy.

  2. Step 2

    Whisk eggs, milk, and butter together till well blended. Add the dry ingredients carefully, making sure no lumps form.

  3. Step 3

    Add peaches and gently mix the batter, being careful not to over mix. Mixing the batter too much can cause gluten to form in the flour, which will make the peach fritters tough and stringy.

  4. Step 4

    Heat oil in a deep pan pr fryer. Using a round ladle or spoon, ladle 1/4 or 1/2 cup of the batter in the oil, making sure you get some peach slices in the batter too. Fry for 3-4 minutes, till peach fritters are golden brown and well done inside.

  5. Step 5

    Drain the fried peach fritters carefully on paper towels and serve warm. You can add a glaze or dust warm fritters in fine granulated sugar to add a sweet touch.

Tips & Warnings
  • Do not allow the oil to smoke when frying the peach fritters. This will cause the fritters to remain raw inside and cook only on the outside.
