This version of vegetable soup may become one of your favorite because it taste great. It's easy too. You probably have the ingredients on hand to get started. Don't miss the beefy variation. You can add leftover chopped cooked roast as well. This has been my families favorite for many years.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1- 141/2 ounce can stewed tomatoes drained
  • 1- 8 ounce can tomato sauce
  • 1- 10 ounce package of frozen mixed vegetables
  • 2 cups water
  • 1 1/2 teaspoons beef boullion granules
  • 1/8 teaspon ground pepper
  • 1 pound ground chuck(if wanted with meat)
  1. Step 1

Combine all ingredients in a dutch oven or a large cooking pot. Bring to a boil; cover, reduce heat and simmer for 20 minutes stirring occasionally.

  2. Step 2

If you prefer to have meat Brown 1 pound of ground chuck in a large skillet, strring until it crumbles and is no longer pink. Add to soup and bring to a simmer. To give it a little extra taste you can dice up onions and cook them right along with your ground beef or ground chuck.

  3. Step 3

Serve with crackers or whatever your preference may be. I like it with a good grill cheese sandwhich.

Tips & Warnings
  • If you don't have frozen vegetables you can use can vegetables that are drained.
