How to Make a Low Carb Beefy Noodle Bake with Shirataki Noodles

Shirataki noodles are great for a low carb diet. They contain no carbs or calories and don't have a flavor of their own so they blend into recipes well.

The noodles can be used like regular pasta and just topped with a sauce, but they also work very well in a casserole like this one.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 lb ground beef
  • 3 large eggs
  • 1 teaspoon seasoned salt
  • 1 tablespoon dried onion flakes
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup shredded sharp cheddar or other hard cheese
  • 2 pkgs (9 oz each) shirataki noodles
  • 9" x 9" baking pan
  • Oil or spray to grease pan
  • Frying pan
  • Large bowl
  • Fork
  • Mixing spoon
  • Wire colander
  • Blender or food processor (optional)
  1. Step 1
    Oven at 350

    Preheat oven to 350 degrees.

    Grease the 9" x 9" baking pan. Set aside.

    Brown the ground beef in the frying pan. Drain and set aside.

    In the large bowl, beat the eggs with a fork until creamy.

    Add the seasonings and beat with the fork again.

    Add the cheese and mix well with the spoon.

    Add the cooked ground beef and mix well with the spoon.

    Rinse the noodles in a wire colander under running water. Drain well.

    Run the noodles in a blender or food processor to chop them into small pieces, if necessary. Add the noodles to the meat/cheese mixture and mix well.

    Pour and spread the mixture in the prepared baking pan.

    Bake for 50 minutes.

    Remove from the oven and let sit for 10 minutes.

    Cut into squares and serve. Number of servings depends on size of squares.

Tips & Warnings
  • Using orzo-shaped noodles eliminates the need to run the noodles through a blender.
  • Shirataki noodles are very filling, so servings don't need to be large.
  • Shirataki noodles can be ordered online.
  • Some shirataki noodles contain soy. Check the ingredients if you want/need to avoid soy products.
  • Shirataki noodles have a slightly fishy smell when first opened, but rinsing them well will remove it.
