Things You'll Need:
- Vegetable brush
- Raw carrots
- Vegetable peeler
- Cutting board
- Knife
- Salad bowl
- Salad

Step 1
Make a basic salad including a variety of lettuces, sliced cucumbers, cherry tomatoes, roasted unsalted sunflower seeds and dried cranberries. Toss to combine. Then put the salad mix in individual serving dishes. You will be adding the carrots to the top of each salad.

Step 2
Scrub the carrots with a vegetable brush and water. Use one large carrot for each 2 servings.

Place washed carrots on a cutting board and slice off each end with a knife.

The outer peeling of the carrot may be peeled off and discarded, but it also contains vitamins and minerals so some people choose to use it. Use the vegetable peeler to "peel" the carrot onto the top of each individual salad bowl. Start halfway down the carrot so that the peeled pieces are smaller, and not the whole length of the carrot. Use half of a carrot for each salad bowl.
