Harvesting mint is one of my favorite gardening tasks. Mint grows heartily always providing plenty of aromatic leaves. Dried or fresh mint leaves make excellent teas. Mint can also be frozen into ice cubes to add a touch of mint flavor to any summer drink. Does this Spark an idea?

      When to Harvest Mint

      Anytime after the plant reaches 8 inches tall, cut it back no more than six inches. Two inches of plant should always be left intact to avoid killing the mint plant. Mint can be harvested several times throughout the spring, summer and fall.

      Drying Mint after the Harvest

      Wash the mint and hang it upside down in a dark place where the air can circulate easily around the mint. You can also lay mint flat to dry at room temperature or in a dehydrator. The ideal temperature for drying mint is 85 to 95 degrees. Dried mint is an excellent herbal tea. It can also be added to soups, stews or jellies. Dried mint also makes an excellent addition to potpourris and crafts.

      Freezing Mint After Harvesting

      You can also freeze the mint inside ice cubes to add flavor to drinks, or in butters or oils for cooking.
