How to Make an Avocado Salad without Lettuce

Who says a salad needs lettuce? This salad is a simple and yummy way to enjoy avocado along with the tomatoes and cucumbers coming out of your garden!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 medium to large tomato
  • 1/2 cucumber
  • 1/2 avocado
  • Vinaigrette dressing
  • Pepper mill
  • Salt
  1. Step 1

    Slice the tomato like an apple. (Cut in half, then cut each half into 4 slices.) If desired, remove seeds from tomato slices. Add to salad bowl.

  2. Step 2

    Cut the cucumber in 1/8 inch slices, using about half the cucumber. Then cut the slices in half (making half-moon shapes) to make bite size pieces. Add to salad bowl.

    Carve a criss-cross grid inside the avocado half (while still in the shell). Now turn the shell inside out, spilling the avocado pieces into the salad bowl.

  4. Step 4

    Toss salad with your favorite vinaigrette dressing. If you don't already have a favorite, I suggest using this dressing recipe which I found online (I have taste tested it and found it to be a crowd pleaser): http://allrecipes.com/Recipe/Absolutely-Fabulous-GreekHouse-Dressing/Detail.aspx

  5. Step 5

    Use pepper mill to grind large pepper pieces on top of the salad. Add pepper and salt to taste. Enjoy!

Tips & Warnings
  • Storing half an avocado: After you cut the avocado, cover tightly in plastic wrap whichever half retains the seed - press the seran wrap into the flesh. Store it in the fridge and use within a couple of days. (It will brown but only on the surface - just scrape the surface before using the remaining half later).
