This is a hot and sweet peanut sauce that can be used as a salad dressing, dipping sauce or poured for Japanese noodles.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3/4 cup Honey Roasted peanuts.
  • 2 tablespoons of vegetable oil.
  • 2 green onions (scallions) chopped.
  • 1/2 teaspoon cayenne pepper.
  • 2 fresh red chilies, chopped and seeded or 2 dried red chilies re-hydrated in warm water for 1 hour, chopped and seeded.
  • 2 tablespoons tamarind sauce,
  • 2 tablespoons soy sauce.
  • 1/2 cup canned coconut milk.
  1. Step 1

Using a food processor process the honey roasted peanuts until they are the consistency of chunky peanut butter, leave in the processor and set aside.

  2. Step 2

If dried red chilies are used, place the chilies in a bowl. Pour in enough boiling water to submerge the chilies under the water. Place a second small bowl or other heavy object on the chilies to hold them under the hot water. Let sit for 1/2 to 1 hour until the chilies are re-hydrated.

  3. Step 3

In a Wok, heat vegetable oil and stir-fry the green onions, garlic and red chilies until soft.

  4. Step 4

Add the soy sauce, coconut milk, cayenne pepper and tamarind. Simmer for about 2 minutes.

  5. Step 5

Pour content of Wok into the food processor with the processed peanuts and process until fully mixed and thickened.

  6. Step 6

Serve sauce over salads, as a vegetable dip, on oriental flat bread roll-ups or as a sauce over stir-fry.

Tips & Warnings
  • Substitute chunky peanut butter and 1 table spoon of honey if you do not have a food processor and mix by hand with a fork.
  • Do not over cook the garlic, it will become bitter as it burns.
