How to Make Mock Olives With Unripe Plums

Plums prepared as follows have a similar taste and texture to store-bought olives and can be substituted for real olives.

Instructions

Things You'll Need:

  • 1 Quart Of Unripe But Full-Sized Plums
  • 1 Large Peeled Garlic Clove
  • 1 Sterilized Quart Size Canning Jar With Lid
  • Pickling Salt
  1. Step 1

    Wash the plums but don't remove the pits.

  2. Step 2

    Prepare a brine solution by combining 1 cup of pickling salt with one gallon of water.

  3. Step 3

    Heat the brine solution until it boils.

  4. Step 4

    Place the plums and garlic clove in an earthenware crock and add enough of the hot brine solution to cover the plums. Cover the crock with a clean cloth and let stand for 24 hours.

  5. Step 5

    After 24 hours, pour off and discard the brine solution.

  6. Step 6

    Prepare another batch of brine solution per Step #2 above and bring to a boil. Drop the plums and garlic clove in the hot brine solution and remove from heat and let stand for one minute.

  7. Step 7

    Remove the plums and garlic clove and place in a sterilized canning jar. Fill to the rim with hot brine solution and seal immediately.

  8. Step 8

    Let stand for one week and they will be ready to be enjoyed.
