How to Grill Pita Bread to Serve with Dip

You are probably familiar with pita, the Mediterranean staple. But the pita you buy at the store is never quite a wonderful as the hot, crunchy-chewy pita served at your favorite Greek restaurant. Follow the steps below to make delicious grilled pita wedges of your own for your next party.

Instructions

Things You'll Need:

  • Pita bread
  • Extra virgin olive oil
  • A pastry brush
  • A grill
  • Tongs
  1. Step 1

    First you'll need to fire up the grill. Usually I make grilled pita as part of another meal that requires grilling. If so, your grill will be hot by the time you put on the pita (you'll want to do the pita last since it grills so fast). If not, just fire up your grill about 10 minutes before you intend to grill the pita.

  2. Step 2

    Using the pastry brush, lightly oil both sides of each pita. Stack on a baking sheet

  3. Step 3

    When the grill is hot, arrange the pita on the grill grate using the tongs

  4. Step 4

    After 2 minutes or so, flip each pita over and grill it on the other side as well. You should see good grill marks on the original side.

  5. Step 5

    Remove pita from the grill and immediately slice into eight wedges.

  6. Step 6

    Serve hot, possibly in a covered bread basket or tinfoil in order to keep warm.

  7. Step 7

    Grilled pita is outstanding with tzatziki (a Greek cucumber yogurt dip), Greek Salad Relish, hummus, or even guacamole! See "Resources" section for great dips to serve with your pita wedges.

Tips & Warnings
  • Watch the pita closely and turn over before it gets too toasted. You want the outside just barely crunchy while leaving the inside moist and chewy.
  • This technique works for Indian naan and other flatbreads as well. Go nuts!
  • If you don't have a grill or it's not grilling weather, you can accomplish roughly the same effect using the broiler in your oven. Make sure to turn the pita once so both sides crisp up, and be very careful not to over-toast.
  • Never serve dry pasty pita wedges to your family and friends! Take a moment to grill them. Your guests will love you.
