How to Make Feta Stuffed Tomatoes

A delicious side dish for a summertime meal! If you would like to make this into an appetizer, just use smaller tomatoes.

Instructions

Things You'll Need:

  • 8 medium tomatoes
  • 2 cups orzo, cooked
  • 3 Tbsp. olive oil
  • 1/2 tsp. ground black pepper
  • 1/2 cup fresh basil, chopped
  • 1 tsp. dried oregano
  • 3/4 cup feta cheese, crumbled
  • Baking sheet
  • Basting brush
  • Large bowl
  1. Step 1

    Preheat the oven to 325 degrees.

  2. Step 2

    In a large bowl, combine the cooked orzo, olive oil, pepper, basil, oregano, and feta cheese. Gently stir together until combined.

  3. Step 3

    Now hollow out each tomato by slicing off the top and gently scooping out the pulp and seeds with a spoon. Set aside a 1/2 cup of the tomato pulp.

  4. Step 4

    Chop the 1/2 cup of tomato pulp and add to the orzo mixture.

  5. Step 5

    Gently brush the inside of the tomatoes with some olive oil and season with salt and pepper. Place the tomatoes upside down on the baking sheet and bake in the oven for 7 to 10 minutes. Let the tomatoes cool for at least 15 minutes.

  6. Step 6

    Stuff the tomatoes with the orzo mixture. They can be served at room temperature or you can warm them in the oven for an additional 10 minutes.
