Things You'll Need:
- 1 1/2 cups white rice flour
- 1 cup tapioca flour
- 1 cup potato starch
- 2 sticks unsalted butter
- 4 eggs
- 2 tsp. gluten free vanilla
- 1 tbs. gluten free baking powder (Featherweight is corn free)
- 1 tsp. baking soda
- 1 1/2 cups milk
- 1 teaspoon xanthan gum

Step 1
This is a perfect birthday cake recipe. It makes a 2 layer 8 or 9 inch cake. If you're dreaming of a delicious white gluten free birthday cake for you or your gluten free child, give this one a try. It's delicious, moist, and tastes good enough for the whole party.
Preheat oven to 350 degrees.
Grease and flour your cake pans. -
Step 2
Beat sugar and softened butter until fluffy. This will take a few minutes.
Add the eggs and vanilla, then beat with mixture until fully incorporated.
Add the flours, baking powder, baking soda, and xanthan gum. Mix at a low speed to combine the ingredients. Add the milk, and mix with a mixer for 2 minutes on low to medium speed. -
Step 3
Using a large spoon, divide the cake batter between the two cake pans. Bake the cakes for around 35 minutes, or until springy. Cool thoroughly, then remove from pans and frost with your favorite gluten free frosting recipe.
