How to Make the Best Gluten Free Cake

If you're gluten intolerant, have Celiac disease, or are allergic to wheat, you can't eat regular cake. That was devastating to me until I learned how to make the best gluten free cake! I've tried a lot of gluten free cake recipes, and this one is the best so far. I have adapted this from several recipes, and will make changes if I find something better. Does this Spark an idea?

  • 1 1/2 cups white rice flour
  • 1 cup tapioca flour
  • 1 cup potato starch
  • 2 sticks unsalted butter
  • 4 eggs
  • 2 tsp. gluten free vanilla
  • 1 tbs. gluten free baking powder (Featherweight is corn free)
  • 1 tsp. baking soda
  • 1 1/2 cups milk
  • 1 teaspoon xanthan gum

      This is a perfect birthday cake recipe. It makes a 2 layer 8 or 9 inch cake. If you're dreaming of a delicious white gluten free birthday cake for you or your gluten free child, give this one a try. It's delicious, moist, and tastes good enough for the whole party.

      Preheat oven to 350 degrees.
      Grease and flour your cake pans.

      Beat sugar and softened butter until fluffy. This will take a few minutes.
      Add the eggs and vanilla, then beat with mixture until fully incorporated.

      Add the flours, baking powder, baking soda, and xanthan gum. Mix at a low speed to combine the ingredients. Add the milk, and mix with a mixer for 2 minutes on low to medium speed.

      Using a large spoon, divide the cake batter between the two cake pans. Bake the cakes for around 35 minutes, or until springy. Cool thoroughly, then remove from pans and frost with your favorite gluten free frosting recipe.

Tips & Warnings

  • All oven temperatures vary, so check your cake in the last 5 minutes to determine if it may be done sooner than the suggested time.
