Things You'll Need:
- 6-8 large potatoes
- cooking oil
- cooking spray
- 1 tsp onion powder
- 2 tsp garlic powder
- 1 tsp seasoning salt
- 2 tsp black pepper
- 1 Tbsp smoked paprika
- 2 Tbsp sugar

Step 1
Pre-heat the oven to 400 degrees, cover a sheet pan with foil and spray with non stick spray. Start by scrubbing the potatoes under cold running water. I don't peel the potatoes we like the skin on them, it adds another texture contrast. Cut off a thin slice on one end of the potato for stability. Stand the potato on one end, make four to five thick slices lengthwise. Then stack them together and slice them into French fries. Don't slice them too thin or they will burn.

Step 2
Next place them on a plate and microwave them for two minutes per plate. I have a potato function on mine that I hit, it runs for five minutes and forty seconds so I just run it for half the time. Heat up a large skillet with about 3 tablespoons of oil, when 2 minutes have passed remove from the oven and place in the skillet and sauté for two minutes. Continue to flip the French fries to ensure they don't burn. Remove from the pan and place in a single layer on the sheet pan. Repeat the process until you are done cooking them.

Place the sheet pan in the oven and bake for 10-15 minutes. In a medium bowl combine the dry seasoning and set aside. At the half way point of cooking the French fries turn them over to ensure even browning. When the fries are done remove from the oven while they are still hot and place in a large mixing bowl. Season with seasoning blend and toss to evenly coat. Serve immediately. Can be served with ketchup, barbecue sauce or your favorite dipping sauce.

on 9/28/2009 Sorry I am just now getting back to you. I tried this with Sweet potatos. It works okay but I had to cook them much longer than regular potatos. Now I used real sliced sweet potatos and not the kind you get precut in the grocery freezer. Those cooked in good time but didn't stay crispy. They got soft and soggy. So there you have it my friend. Smile!
