When we think of Watermelon, we tend to think of it as a refreshing summer fruit, rather than a side salad that can be part of a meal. Watermelon is a versatile fruit which can take the place of a vegetable in a salad. This is an unusual salad, but it is unusually good.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1/2 small Watermelon
  • 1 medium Vidalia Onion
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin Olive Oil
  • 2 tablespoons fresh Mint
  • 4 oz. Feta Cheese
  • Salt & Pepper
  1. Step 1
     

    Remove the rind from the Watermelon and cut the watermelon up into bite sized pieces. Take the seeds out as you go.

  2. Step 2
     

    Peel the Vidalia Onion and slice it into thin rings.

  3. Step 3
     

    In a large bowl, add 1/4 of a cup of Red Wine Vinegar, salt to taste, fresh ground pepper to taste. Mix well until the salt is dissolved. Slowly add in 1/2 of a cup extra virgin Olive Oil. Whisk the entire time you are adding. Add 2 tablespoons of fresh Mint. Taste to make sure you have enough salt and pepper. If not add to taste.

  4. Step 4
     

    In another large bowl add watermelon, Vidalia Onion rings and 4 ounces of crumbled Feta Cheese. Toss the ingredients. Pour the Olive Oil and Red Wine Vinegar dressing over the top and toss making sure the dressing has coated the other ingredients.
