Things You'll Need:
- Either 6 medium oranges, 6-8 lemons, or 4-6 grapefruits
- 1 tablespoon of salt
- 4 cups of water
- 2 cups of sugar

Step 1
Prepare the citrus peel. Cut the peels into sixths. Remove as much of the white as possible with a spoon.

Begin to remove the bitterness from the peels by soaking them. Put the water in a bowl and add the salt and sliced citrus peel. Set a small plate on top of the peels to keep them under water. Let it stand overnight in the refrigerator.

After the citrus peels are finished soaking, drain them and rinse them well.

Put the citrus peels in a pan, cover them with water, bring to a boil and drain. Do this three times and it will finish removing the bitterness.

Cut the peel into strips.

Cook the citrus peel in sugar. Place the citrus peels in a saucepan. Add 2 cups of sugar and ½ cup water. Heat this mixture until the sugar dissolves. Cook slowly. Remove the pan from the heat when the peel is translucent.

Drain the peels and roll them in granulated sugar.

Dry the sugared peels on a wire rack. This recipe should make about 2-2 ½ cups of candied citrus peels.
