Candied citrus peel, such as that made from oranges, lemons or grapefruit, is an easy candy to make. It looks attractive and makes a nice gift for friends, teachers, relatives, or coworkers around the holidays. Use the citrus fruit of your choice, or try them all. Limes are also adaptable to this recipe.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Either 6 medium oranges, 6-8 lemons, or 4-6 grapefruits
  • 1 tablespoon of salt
  • 4 cups of water
  • 2 cups of sugar
  1. Step 1

Prepare the citrus peel. Cut the peels into sixths. Remove as much of the white as possible with a spoon.

  2. Step 2

Begin to remove the bitterness from the peels by soaking them. Put the water in a bowl and add the salt and sliced citrus peel. Set a small plate on top of the peels to keep them under water. Let it stand overnight in the refrigerator.

  3. Step 3

After the citrus peels are finished soaking, drain them and rinse them well.

  4. Step 4

Put the citrus peels in a pan, cover them with water, bring to a boil and drain. Do this three times and it will finish removing the bitterness.

  5. Step 5

    Cut the peel into strips.

  6. Step 6

Cook the citrus peel in sugar. Place the citrus peels in a saucepan. Add 2 cups of sugar and ½ cup water. Heat this mixture until the sugar dissolves. Cook slowly. Remove the pan from the heat when the peel is translucent.

  7. Step 7

Drain the peels and roll them in granulated sugar.

  8. Step 8

Dry the sugared peels on a wire rack. This recipe should make about 2-2 ½ cups of candied citrus peels.
