Things You'll Need:

  • 18 or 25 ounce box yellow cake mix
  • One - three 9 ounce box lemon instant pudding mix

  • 2 and one third cups angel flake coconut
  • 2 - eggs
  • One fourth cup oil

  1. Step 1
    Ingredients

    Ingredients

Blend cake mix, pudding mix, fruit cocktail and juice, 1-cup coconut, eggs, and oil in a large mixing bowl at medium speed. Pour into a greased & floured 13x9 inch pan. Make sure you already have all these ingredients layed out and ready to use since there are going to be so many of them.

  2. Step 2

Sprinkle the rest of the coconut, brown sugar, and nuts. Bake at 350 for 45 minutes or until the cake springs back when lightly touched. Cool the pan for 15 minutes. Be careful and watch and not let this burn. Check after 30 minutes at least because all ovens are not the same.

  3. Step 3
    Stir it up

    Stir it up

Make a butter glaze by combining the margarine, half cup sugar, and evaporated milk. Then spread hot butter glaze over the warm cake. May serve with cool whip if desired. The glaze will be very hot so be very careful when spreading on the cake. If you do add whip cream this will add that little extra sweetner to it. This part is up to you.
