Things You'll Need:
- 9 inch pie shell, baked
- 2 lbs strawberries
- 1 cup sugar
- 3 tablespoons cornstarch
- 1/2 cup water
- 2 tablespoons butter
- 1 cup whipped cream
- 3 tablespoons powdered sugar
-
Step 1
First you need to bake the pie crust. Follow the baking directions on the box. Before you put the crust in the oven, you should take a fork and prick the pie crust so no bubbles form during the baking process. Once the pie has finished baking, set aside to cool.
-
Step 2
Next, wash and hull the strawberries. Make sure the strawberries are not left in water, this will make the pie soggy. Now, you will need to mash the strawberries into a pulp, mash enough to fill a cup. The rest of the berries will be used later to fill the pie crust.
-
Step 3
Now we are going to make the pie filling. Combine the sugar, cornstarch, mashed strawberries and water in a medium saucepan. Cook over medium heat (stirring constantly) until mixture begins to boil. Continue cooking for a couple more minutes, until sauce thickens and becomes transparent. Last, add the butter and remove from heat and let cool.
-
Step 4
While the sauce is cooling, fill the pie crust with the remaining strawberries. If you have large strawberries, you will need to slice them in half. If you are using small strawberries, then add the whole berry. Last, pour the cooled glaze over the strawberries and refrigerate for 2-3 hours.
-
Step 5
Once the pie has chilled, you can add the whipped topping. To make the topping, whip the cream until peaks start to form then add the powdered sugar and whip until cream begins to stiffen. Now you are ready to add the topping to your strawberry pie. Last but not least, cut yourself a slice and enjoy.
