Things You'll Need:
- 4 nectarines
- 1/4 cup granulated sugar plus 2 tablespoons reserved
- 1/2 teaspoon pure vanilla extract
- 1/2 cup milk
- 3 tablespoons unsalted butter, room temperature
- 2 cups whipped topping
- 1 box of reduced calorie biscuit mix

Step 1
Preheat your oven to 425 degrees.

Step 2
Pit and slice three of your nectarines.
Place them in a bowl with the sugar and vanilla, then gently toss.
Set aside. -
Step 3
Peel, pit and then slice the last nectarine.

In a large bowl combine the biscuit mix with the reserved sugar, milk and butter. Then stir in the one nectarine you prepped.

Drop the biscuit mix onto a greased, or parchment paper lined baking sheet using a 1/2 cup baking cup measuring cup.

Place the biscuits in the over and cook for about 12 minutes.

Place the biscuits on a wire rack to cool.

Now slice the biscuits in half horizontally and pace the bottom onto a place.

Place 1/3 cup of the nectarine mixture on the biscuit.
Then place 1/4 cup of the whipped cream topping on top of the nectarines.
Now place the other half the biscuit on the top place a dollop of whipped cream on the very top. -
Step 10
Serve and enjoy!

You can use store bought biscuits, shortcake cups or french toast. Anyway you make it, it is sure to taste delicious and refreshing!
