How to Cook a Healthy Pork Dish

Creating a healthy pork dish with the help of a slow cooker is a great alternative to fast food or heavily-processed frozen dinners. This method of cooking will allow one to prepare the recipe in the morning and allow it to cook, unattended, throughout the day. Spinach is a main ingredient in this recipe, although its flavor is hardly noticeable in the finished dish. According to the USDA dietary guidelines, spinach is a good source of Vitamin A, Vitamin C and folate, which are important to maintain good health.

Instructions

Things You'll Need:

  • Slow cooker
  • 2 lb. pork tenderloin
  • 1 cup dried great northern beans
  • 1/2 cup chopped onion
  • 1 10 oz. package frozen chopped spinach
  • 5 chopped tomatillos
  • 8 cups water
  • 1 tbsp. chicken bouillon
  • Salt
  • Pepper
  • Cooked brown rice
  1. Step 1

    Place the pork tenderloin into a five quart or larger slow cooker. Add the great northern beans, chopped onion, frozen chopped spinach and chopped tomatillos to the slow cooker.

  2. Step 2

    Pour eight cups of water over all of the ingredients in the slow cooker.

  3. Step 3

    Add one tablespoon of chicken bouillon to the slow cooker and enough salt and pepper to suit your personal tastes.

  4. Step 4

    Cover the slow cooker and cook on high for at least six hours but no longer than 10 hours.

  5. Step 5

    Remove the lid from the slow cooker and use two large forks to shred the pork tenderloin. The pork should shred easily when it is thoroughly cooked.

  6. Step 6

    Serve the pork dish in bowls over cooked brown rice for a healthy meal. Those on low carb diets can omit the brown rice and eat the pork dish by itself in order to meet their nutritional goals.
