Spiny lobster, also known as the Florida lobster or Caribbean spiny lobster, is a saltwater crustacean that inhabits the oceans from North Carolina to Brazil. They are commonly harvested, both commercially and recreationally, to be served in homes and restaurants across the country. This recipe yields two broiled spiny lobster tails, and will serve two people.

Instructions

Things You'll Need:

  • 1¼ cup unsalted butter
  • Small saucepan
  • 2 fresh spiny lobster tails
  • Knife
  • Broiler
  • Broiler pan
  • Basting brush
  • ½ tsp. paprika
  • ½ tsp. black pepper
  • ½ tsp. kosher salt
  • Small bowl
  • 3 tbsp. lemon juice
  • Sauce cup
  1. Step 1

    Melt ½ cup unsalted butter in a small saucepan over medium-low heat. Cut the spiny lobster tails into halves, lengthwise. Preheat the broiler and set the rack so the lobster tails will be about 4 inches from the heat source.

  2. Step 2

    Lay the spiny lobster tails open and flat over a broiler pan. Use a basting brush to coat the meat inside the tails with the melted butter.

  3. Step 3

    Combine the paprika, pepper, and salt in a small bowl. Sprinkle the seasonings over the spiny lobster tail meat.

  4. Step 4

    Put the broiler pan into the broiler, and cook for 8 to 12 minutes. Larger spiny lobster tails should be cooked between 10 and 14 minutes.

  5. Step 5

    Mix the remaining ¾ cup butter with the lemon juice in a small saucepan over medium heat, and cook until the butter has melted. Pour the mixture into a sauce cup.

  6. Step 6

    Remove the spiny lobster tails from the broiler and serve hot, with the melted butter and lemon juice on the side for dipping.

Tips & Warnings
  • Prevent the tails from curling while broiling by bending the tails backwards towards the shell until they crack. Frozen spiny lobster tails can also be used in this recipe. Thaw and drain thoroughly before applying butter and seasoning.
