Things You'll Need:
- 1¼ cup unsalted butter
- Small saucepan
- 2 fresh spiny lobster tails
- Knife
- Broiler
- Broiler pan
- Basting brush
- ½ tsp. paprika
- ½ tsp. black pepper
- ½ tsp. kosher salt
- Small bowl
- 3 tbsp. lemon juice
- Sauce cup

Step 1
Melt ½ cup unsalted butter in a small saucepan over medium-low heat. Cut the spiny lobster tails into halves, lengthwise. Preheat the broiler and set the rack so the lobster tails will be about 4 inches from the heat source.

Lay the spiny lobster tails open and flat over a broiler pan. Use a basting brush to coat the meat inside the tails with the melted butter.

Combine the paprika, pepper, and salt in a small bowl. Sprinkle the seasonings over the spiny lobster tail meat.

Put the broiler pan into the broiler, and cook for 8 to 12 minutes. Larger spiny lobster tails should be cooked between 10 and 14 minutes.

Mix the remaining ¾ cup butter with the lemon juice in a small saucepan over medium heat, and cook until the butter has melted. Pour the mixture into a sauce cup.

Remove the spiny lobster tails from the broiler and serve hot, with the melted butter and lemon juice on the side for dipping.
