Potato bake is one of my family favorite!! We bring it to potlucks, picnics, church events and more! Everyone always asks for the recipe and rave over the dish. It's fairly easy to make and has lots of verity to add different things to it to make it a side dish or a whole meal!!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 lbs cubed hash browns
  • 1 can cream of chicken
  • 16 oz sour cream
  • 2 cups grated cheese
  • 1/2 cup chopped onion
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8 Tbp butter
  • 6 cups rice chexs crushed to 4 cups
  1. Step 1

Heat oven to 350 degrees. Butter shallow 3 quart dish. Break up hash brown potatoes in a large bowel. Combine potatoes with soup, sour cream, cheese, onions, salt and pepper.

  2. Step 2

Pour potato mix into baking dish and pat flat in dish. In second bowel combine melted butter and chex crumbs until crumbs are well coated with butter. Sprinkle butter mixture over potato mix as a top layer.

  3. Step 3

Bake 50 to 55 minutes. Chex should be golden brown on top and potato mix bubbly in middle. This makes 12-16 servings.

  4. Step 4

To make as a whole meal add ham cubes, shredded chicken or turkey. Veggies can also be added like peas or corn. Crumbled bacon is also good on the top. Enjoy!
